Party season is upon us! We’ve noticed the change in atmosphere on the estate with celebrations aplenty and the return of the long sunny lunch, and we’re loving it. Originally hailing from the Jura region in eastern France, we’ve developed a wine style that best suits its new home in Red Hill. Bright citrus and florals, meshed with stone fruit, a little minerality and plenty of texture for good measure. It’s rich but refreshing.



When we think Rosé, we think perfume and texture, fruit-weight, and freshness. By mixing and matching our wine making techniques we’ve created a wine to celebrate any occasion - with, or without food.



The warmer season screams BBQ, and few wines match up better to some beautifully barbecued meat (or new season vegies) than a juicy, aromatic Grenache. “Grenache at Montalto”, I hear you say, well, it just so happens that the answer is, yes. With successive low-yielding vintages, we couldn’t turn down an opportunity to get our hands on some outstanding Heathcote Grenache.

Cool and fresh mornings make way for sunny and warm days. We are now letting our asparagus rest and grow to its fern-like maturity in order to store energy into its roots for next year’s harvest. Our garlic is now being dug and will hang to dry, before being braided and hung in garlands in our Piazza and Restaurant. Our incredible tomatoes are growing well in our polytunnels and fields.

Zucchini plants are producing lots of male flowers that we can harvest for our chefs before the female flowers start to develop.

Our ‘Orchard Keepers’ (also known as our flock of chickens) are busy keeping pests in check, while we welcome our newly hatched next generation of hens.

"We’re waiting patiently for the first of our apricots to ripen in our orchards, and have closed the nets on our raspberry patch to keep the birds out. Our first harvest is getting close and, as every late Spring, we get to steal a few early fruits to ensure they’re up to standard for our chefs. Yum."

In October, Julie harvested and delivered around 20kg of beautiful Golden and Chioggia beetroots. We carefully preserved this amazing haul in a variety of different ways - some pickled, some salted and others fermented. These different styles and flavours will make for an outstanding new inclusion on our menu: Beetroot & Stracciatella. Rich creamy Stracciatella, with earthy and zingy varieties of beetroots and a dressing of toasted walnuts, our olive oil and sherry vinegar – the perfect mid-course dish.

Rhubarb is in full swing again, so what better way to make use of another bumper crop than in our new dessert: Steamed rhubarb pudding, rhubarb poached in rosemary syrup with rhubarb & milk ice cream. The lovely herbaceous-ness of the rosemary with the amazing flavour of our rhubarb will pair excellently with the smooth, creamy ice cream and the warm pudding will tie this all together perfectly.

Late spring in The Piazza is such a stunning time to enjoy the estate. Enjoy a glass of our newly released Sparkling Rosé with freshly shucked Sydney Rock Oysters on the upper deck overlooking the vines, or at one of our tables alongside Wendy’s Garden.

My must-try dish for November is our new main: grilled chicken with caponata (a super tasty, Sicilian-inspired braised vegetable dish) with labneh and rosemary-infused honey.

Montalto is thrilled to welcome twilight jazz back to Red Hill this summer as part of the Peninsula Summer Music Festival!
