A single site wine from the Tuerong subregion at the northern end of the Peninsula

 

A complex and expressive nose of Beurré Bosc pear, layered with white florals, wet river stone, almond croissant and musk. Hints of baking spice and a subtle savoury note reminiscent of chicken broth add depth and intrigue.

 

The palate is textural and structured, with poached pear fruit at its core, supported by citrus drive and gentle spice. A suggestion of dried rose petal and potpourri emerges through the mid-palate, adding perfume and complexity. Full flavoured yet finely balanced, it carries bright natural acidity and a mineral thread that brings focus and tension. Long, clean and persistent, the finish reflects both power and restraint.

WINEMAKING NOTES

Seventy-five percent of the blend was whole bunch pressed to stainless steel tank followed by cold settling to achieve clarified juice. The juice was then decanted off solids followed by inoculation with the yeast strain QA23. Fermentation temperatures were controlled between 14 and 16 degrees Celsius to preserve varietal character and freshness. The remaining portion was whole bunch pressed and then transferred directly to French oak barriques with a considered amount of suspended solids for wild fermentation. The wine was occasionally stirred and left to mature on yeast lees for four months prior to being blended with the tank component, filtered and bottled.
