Fresh and mineral on the nose, with chalk, flint, lemon blossom, lemon pith, Royal Gala apple and pear. The palate is full-flavoured and textural, with loquat, kaffir lime and chewy phenolic structure. Powerful mid-palate weight is balanced by tight, persistent lemony acidity, finishing long and saline.

WINEMAKING NOTES

Hand-harvested grapes were whole bunch pressed to stainless steel tanks followed by cold settling to achieve a highly clarified juice. The juice was the racked (decanted) off solids followed by inoculation with the yeast strain QA23. Fermentation temperatures were controlled between 14 and 16 degrees Celsius until dry. Every effort was made to preserve varietal character and freshness.
