Our Fumé Blanc was developed to take advantage of the wonderful aromatics associated with Sauvignon Blanc, whilst adding some additional texture, mouthfeel, and complexity using oak fermentation and barrel maturation. 

 

Classic Sauvignon Blanc tropical fruit aromas including, lychee and stone fruits (think peach) blend with nuances of cut grass, coffee grind and some attractive white florals. On the palate, mouth-filling peach and lychee fruit is supported by textural creamy oak influence together with a twist of orange citrus with a tight and bright acid line to finish.

WINEMAKING NOTES

Grapes were whole bunch pressed directly to French oak puncheons and barriques (10% new) with a considered amount of solids maintained in the juice. Wild yeast fermentation followed together with natural malolactic fermentation. The wine was then left to mature on lees for 7 months in oak prior to blending and bottling.
