Intensely perfumed with lifted florals, talc and rosewater, layered with musk stick, apple, fruit tingles and a touch of banana passionfruit. WINEMAKING NOTES

Hand-picked and whole-bunch pressed, the juice was cold settled before racking and inoculation with yeast strain X5. Fermentation proceeded slowly at cool temperatures, never exceeding 14°C, to safeguard fruit purity and freshness.
The ferment was stopped early, leaving 34g/L residual sugar to deliver an off-dry style. Bottled early to preserve vibrancy, freshness and varietal definition
