WHAT I’M DRINKING THIS SUMMER
Joining us in 2021, our Restaurant Manager Gauthier is not only supremely experienced in all aspects of hospitality, he has an enviable palate and ability to match wines not just to the menu, but the season and atmosphere too.
Here’s what Gauthier is drinking this summer...
“January is the peak of summer in Red Hill, bringing warm sunny days and cool refreshing evenings. I’ve had some of my favourite Montalto moments on summer nights – when the estate is empty, the day is done, and we’re able to sit on The Restaurant deck overlooking the vines as the sun goes down. But summer is also about heading out and about with friends and family, long late lunches, lazy afternoons with wines to match! Here are my recommendations.” ~ Gauthier Georgelet, Restaurant Manager.
2017 Montalto Cuvee One
“Being a true son of the Champagne region, I have been a fan of our Cuvee One range since day one; our 2017 Vintage does not disappoint, far from it in fact! Perfect assemblage of our best Chardonnay and Pinot noir, matured on lees for 5 years and minimum dosage. It creates a complex, fresh and textural wine with a crunchy acidity - loaded with citrus and bready yeast aromas. A great match with freshly shucked oysters or a well garnished seafood platter.”
“I’ve had my eyes on this one for a while now and was really excited about its release in late November. I’m generally a Chardonnay drinker, but there is no match to a great Fumé on a warm afternoon. Fresh but textural with a acidity, classic Sauvignon Blanc aromas of passionfruit combined with wet stone, white peach and much more. I’ll be enjoying with a fresh spanner crab salad on shizo leaves, or simple BBQ prawns topped with fresh herbs and passionfruit salsa.”
“It’s always hard to choose a favourite amongst our Pinot Noirs, I had to start with what I would eat first-and if there’s something I love to cook over coals in summer it has to be quail, simply marinated with fresh herbs and olive oil. Our 2021 Merricks Pinot Noir is the perfect match, with dark concentrated juicy fruits, cherry ripe, earthy and structural tannins.”
After a cooler start to summer this year, we’re now well and truly into the most stunning season on the Peninsula!
We’re open 7 days a week, from 11am–5pm. And don’t forget to check out our Lawn Bar this summer–the perfect place to grab a wine, order from a dedicated casual menu and stretch out on the lawn overlooking the lush green vines.
