The Tuerong site naturally produces sweet-fruited wines, making whole bunch fermentation not just suitable but desirable. This approach tempers the richness, layering in savouriness, spice, and structure. The result is highly aromatic, with subtle meaty and earthy root-vegetable notes woven through plum and mulberry fruit. Mouth-coating chalky tannins provide further balance, leading to a long, savoury finish

WINEMAKING NOTES

Grapes were meticulously sorted and cold soaked for 5 days prior to the onset of wild fermentation. 38% of the blend underwent 2 weeks carbonic maceration before being destemmed, with fermentation finishing on the skins. Following pressing, the wine was lightly racked to French oak barriques (28% new) for natural malolactic fermentation and 11 months maturation.
Bottled in February 2025.
