The Merricks site invariably produces a bolder expression of Pinot Noir, with deeper colour and an abundance of dark blue and black fruits. The palate is plush and generous, framed by supple skin tannins that build layers of complexity and carry through to a long, expressive finish.

WINEMAKING NOTES

Hand harvested grapes were sorted and destemmed into 2 tonne open fermenters. Cold soaked for 5 days prior to the onset of wild fermentation. A seven-day post ferment maceration followed. The wine was then pressed and lightly racked to French oak barriques (27% new) for natural malolactic fermentation and 11 months maturation. Bottled in February 2025.
