The palate boasts white fleshed peach, mandarin and raspberry complemented by a character reminiscent of dustings of icing sugar. The limestone minerality combines seamlessly with quenching citrus acidity. A Rosé of nuance, structure and length.”

WINEMAKING NOTES

This Montalto Estate Rosé is crafted from a vinification technique known as Juice Stabulation. Juice Stabulation is the process of extracting flavour and flavour precursors from the gross juice lees.
Hand harvested fruit was whole bunch pressed at very low pressure with minimal rumbling to avoid excessive extraction whilst under inert gas. Throughout the vinification process, every effort was made to minimise exposure to air and to potential oxidation. The pressed juice was chilled to below zero degrees Celsius and subsequently stirred 3 times per day for 21 days prior to warming and inoculating with an aromatic yeast X5. The wine was then stabilised and filtered prior to bottling.
