A highly expressive nose of baked Nashi Pear, ripe stone fruits, lychee, orange blossom, honeycomb and nougat. On the palate the wine is refined with classic Pinot Gris fruits of baked pear and apple, combining with peach slice, cinnamon spice, almonds and cashews. A wine of concentration and freshness with a tightly coiled finish.

WINEMAKING NOTES

Crafted from a blend of tank fermentation (15%) and barrel fermentation (85%), with 85% of the blend going through malolactic fermentation. All fruit was whole bunch pressed. The tank component was cold settled prior to racking followed by inoculation with the yeast strain QA23 and fermented between 14 and 16 degrees Celsius to preserve fruit purity and freshness – at the completion of fermentation this component was then transferred to old oak for maturation. The barrel fermented portion was aerobically handled and transferred directly to old French oak barriques and puncheons, with a considered amount of suspended solids. Wild fermentation ensued, followed by natural malolactic fermentation. The wine was then left to mature on lees for 7 months prior to blending and bottling.
