An early drinking style sparkling wine made from 100% Pinot Noir harvested from aromatic clones at our Red Hill Vineyard. Bright and energetic, this wine is a perfect aperitif and generous enough to accompany a host of foods.

A lace-like thread of bright red fruit flavours, notably strawberry and red cherry sherbet combine with some apple and rhubarb notes and a whiff of talc. The palate is creamy and effortless along a gentle bead of froth and bright crunchy acidity.

WINEMAKING NOTES

100% Mornington Peninsula Pinot Noir. With the intent of producing a wine with tremendous freshness and purity, we’ve utilised the Charmat method to realise this goal. Grapes are harvested at optimum ripeness followed by gentle whole-bunch pressing. The juice is cold settled before racking and then inoculated with DV10 yeast. At the completion of primary fermentation, the base wine then undergoes an additional fermentation in a pressure vessel, generating the fine bead and freshness associated with this style. The wine is bottled and released for immediate drinking.
