Lemon curd, white peach, grapefruit, flint and slate notes, white florals, oatmeal with a curious touch of Life Saver’s fruit tingles. There are some gentle oak aromas by the way of brioche just to round out the package. The palate is juicy, almost quenching. Lots of white peach and a collage of citrus, moreish acidity, together with a mineral lick and a savouriness reminiscent of miso. The mid-palate is weighted, with a structural presence and textural framework. This is a delicious Chardonnay with hallmark Pennon Hill qualities exhibiting great varietal definition and regional expression.

WINEMAKING NOTES

Hand harvested fruit is whole bunch pressed directly to French oak barriques and
puncheons (23% new). A considered amount of solids is maintained in the ferment.
Following wild fermentation, natural malolactic fermentation brings the natural acidity
back into check and the wine is then left to mature on lees; stirred when appropriate
following appraisal to enhance flavour and texture. The wine is aged for 9 months in
oak prior to blending and bottling.
