An intriguing nose of ripe citrus, fresh fig, quince, mandarin peel and lemon curd, layered with savoury chicken broth, wet stone, slate, oyster shell and delicate oak florals. The palate is juicy and generous with ripe orange citrus and nectarine, driven by quenching natural acidity. A textural finish of nougat and marzipan completes a wine of freshness, complexity, texture, and persistence.

WINEMAKING NOTES

Whole-bunch pressing is employed, with no SO₂ additions until bottling. Juice handling is deliberately oxidative throughout vinification, supported by a considered level of solids during fermentation to help shape the wine’s texture and complexity. After pressing, the juice is transferred to French oak barriques and puncheons (26% new). Wild fermentation ensues together with natural malolactic fermentation bringing balance to the acid profile. The wine is left to mature on lees, which are stirred when appropriate following appraisal. The wine is aged for 11 months in oak prior to blending and bottling
