WINEMAKING NOTES

The 2017 Pennon Hill Late Harvest Sauvignon Blanc is a single vineyard wine hailing from our warmer Tuerong vineyard. The grapes were allowed to ripen significantly (26 Brix) prior to cutting canes to encourage further sugar and flavour concentration. The grapes were whole bunch pressed and then cold settled in stainless steel to achieve a brightly clarified juice before racking and inoculation with EC118 yeast. Fermentation temperatures were controlled between 16 and 18 degrees Celsius and the ferment arrested midway through its journey ensuring a perfect balance of sugar and alcohol.
