Quartz color with green hues with a core of ripe grapefruit, white nectarine, and a hint of citrus zing. There are also some white florals here in the Star Jasmine realm complemented by a little talc and a savory hint of chicken stock on the finish. This is a wine of breadth, weight and generosity. Whilst it’s a chardonnay in the classic Montalto style, the phenolic framework sets this wine apart from its stablemate ‘The Eleven’.

WINEMAKING NOTES

Whole bunch pressing is utilised. No SO2 is added until bottling, consequently there is
oxidative juice handling throughout the vinification period. A considered amount of
solids is maintained in the ferment. After whole bunch pressing, the juice is transferred
to French oak barriques (28.6% new). Following wild fermentation, natural malolactic
fermentation brings the natural acidity into balance and the wine is then left to mature
on lees, which are stirred when appropriate following appraisal. The wine is aged for
11 months in oak prior to blending and bottling in February 2023.
