Raw Salmon, Crème Fraiche & Rose
The decadent richness of raw salmon and crème fraiche works perfectly with dry and textural Rose. Our new 2013 is brimming with strawberry, red currant and fragrant florals and crisp, youthful acidity.
Asparagus, Hollandaise & Pinot Grigio
New season asparagus and hollandaise is a classic dish that marks the start of spring and there’s no better match than the fresh, vibrancy of new release Pinot Grigio. A chilled glass of 2013 Grigio reminds us of crunchy granny smith apples, nashi pears and delicate white flowers. The crisp and moreish limey acidity is the perfect foil for hollandaise.
Try this simple hollandaise recipe.
- 3 egg yolks
- 6 tbs softened butter
- Salt, for seasoning
- White pepper, for seasoning
- 1 tbs lemon juice
Place 3 egg yolks in a heatproof bowl over a pan of simmering water (don’t let bowl touch water). Whisk until light, then slowly add 6 tablespoons of softened butter, 1 tablespoon at a time. Whisk continually until mixture thickens, then season with salt and white pepper. Stir in 1 tablespoon of lemon juice and stir immediately
