Hand harvested grapes were picked at optimal ripeness followed by whole bunch pressing. The juice was cold settled in stainless steel vats before racking and inoculation with QA23 yeast. Fermentation temperatures were controlled between 14 and 16 degrees Celsius until dry, with a view to maximising varietal definition and fruit purity. | |
