Sweet primary fruit aromas of raspberries, blueberries and plums combine with a complex array of fragrances including liquorice, black olives, pepper, nutmeg and cloves.
Juicy red fruits merge with some meaty, savoury and spicy notes and are well supported by the gentle French oak. The tannins are youthful and fine and the palate has a rich and balanced presence with a moreish acidity providing drive and length.

A cool-climate style true to its viticultural origins. The grapes for the 2016 Pennon Hill Shiraz are sourced predominantly from our Tuerong vineyards (60%) with the balance coming from our Black Rabbit vineyard in Red Hill South. The fruit is hand harvested and de-stemmed into 2 tonne open fermenters, followed by a short cold maceration period of between 3 and 5 days. Some batches underwent wild fermentation and others were inoculated with RC212 yeast. 8% of the blend underwent 10 to 14 days of carbonic maceration before being destemmed into 2 tonne open fermenters where primary wild fermentation was completed. At the completion of primary fermentation, the grapes were pressed and the wine transferred to French oak barriques (17% new) for malo-lactic fermentation followed by maturation for 11 months.
