Vineyard
The fruit for the 2009 Pennon Hill Shiraz was grown on two of our Mornington Peninsula vineyards—the Black Rabbit Vineyard & the Hawkins Hill Vineyard— both located within the Red Hill sub-region. The Mornington Peninsula produces a distinctively elegant and savoury cool-climate style of Shiraz. Hand-harvesting, zero-irrigation, and low average yields of 2 tonnes per acre serve to emphasise fruit quality.

Winemaking
The Pennon Hill Shiraz was crafted with the use of both modern New World and traditional Old World winemaking techniques with the purpose of highlighting the traits of cool-climate Shiraz—which are elegance and approachability.
- Crush: Gently de-stemmed to small 2-tonne open pot fermenters
- Coak Soak: 6 days, with hand plunging of caps once daily
- Yeast: Cultured
- Fermentation: Up to 10 days
- Post ferment maceration: up to 10 days
- Maturation: 18 months, French Oak (20% new oak)
- Fining/Flitration: Zero fining followed by crossflow filtration.

Cellaring Advice
The 2009 Pennon Hill Shiraz, like most cool-climate Shiraz is an approachable wine that drinks wonderfully in its youth. However, with careful cellaring, it is a wine that will develop savoury complexity and softer tannins over the next 5 years.
