Vineyard
The Sauvignon Blanc is sourced from two of our vineyards on the Mornington Peninsula.
The cool climate of the Peninsula provides an extended ripening period producing grapes with high natural acidity and intense fruit weight. Our careful attention to detail in the vineyard, by way of parcel selection and harvest criteria followed by meticulous winemaking practices ensures the highest level of wine quality is achieved.

Vintage
After a dream growing season, our Sauvignon Blanc was harvested in early March in ideal conditions. The mild, steady vintage has resulted in delicate, balanced flavours, with fine natural acidity.
Winemaking
This wine is whole bunch pressed straight to tank to capture a delicate freshness that this wine produces. After cold settling the wine is racked off lees to keep the intense fruit quality before short term tank maturation
