Vineyard
The Pinot Grigio is sourced from three of our vineyards on the Mornington Peninsula.
The cool climate of the Peninsula provides an extended ripening period producing grapes with high natural acidity and intense fruit weight. Our careful attention to detail in the vineyard, by way of parcel selection and harvest criteria followed by meticulous winemaking practices ensures the highest level of wine quality is achieved.

Vintage
After a dream growing season, our Pinot Grigio was harvested in early March in ideal conditions. The mild, steady vintage has resulted in delicate, balanced flavours, with fine natural acidity.
Winemaking
We stay true to Italian Grigio style; cold settling followed by a clean racking and cool fermentation assists in maintaining the fruit purity of this wine, whilst accentuating the underlying minerality. At the completion of fermentation, the wine is stabilized and bottled early to preserve varietal freshness.

- Fermentation: Cold fermented 14-16 degrees C
- Post-ferment maceration: Lees stirring in tank for short period
- Fining/Filtration: Light PVPP fining followed by Crossflow filtration.

Cellaring Advice
