The cool climate of the Peninsula provides an extended ripening period producing grapes with high natural acidity and intense fruit weight. Our careful attention to detail in the vineyard, by way of parcel selection and harvest criteria followed by meticulous winemaking practices ensures the highest level of wine quality is achieved.

Vintage
Weather was generally warmer and drier than in the previous year until some timely rainfall in December that 'freshened' canopies and gave more weight to the very good set in bunches across varieties. Hand picking in mid February saw exceptional fruit provided for the winery.
Winemaking
All wines were processed separately before blending, 50% Chardonnay, 40% Pinot Noir and 10% Pinot Meunier and then bottled and tiraged for secondary bottle fermentation.

- Pre fermentation: Cold settled and racked of solids.
- Primary Fermentation: Cold fermented 14-16 °C in Stainless Steel Vats. No Malo-lactic Fermentation
- Secondary Fermentation: Tiraged, bottle fermented
- Post-ferment maturation: 36 months on bottle lees
- Fining/Filtration: Lightly fined with egg white and filtered once
